If your TV has a VGA input, you're going to get a lot better quality from that than you're going to get from S-Video. In theory it should be easier to get working as well, since VGA is primarily a computer connector. DVI would be better quality still.
What make and model of television do you have?
Have you tried updating your video card drivers?
What are you using for a computer monitor, and what resolution are you running it at?

The yellow connector is composite video, with an RCA connector, it's lesser quality compared to S-video.
VGA (aka D-sub, HD-15, DE-15, etc.) is usually colored blue (if at all) and is trapezoidal and has 15 small pins. It's capable of much higher quality than composite or S-video, but isn't a common connector on televisions. It's mostly used for computer monitors, and sometimes on HDTVs.
I don't have a computer with an nVidia card, so I can't search through menus, sorry.
You might try setting your resolution to 1024x768 or 800x600 and seeing if that allows you to choose TV-out, because I think most S-video outputs are limited to those resolutions (and if they offered higher you wouldn't be able to make out text anyway)
