My Mom gave me a case of applesauce...my kids don't like the texture of applesauce, so we don't eat much of it. Any ideas for using this up (in baking, maybe?) Thanks!

You can use it in place of half (or all) the oil in cakes, muffins, bread, etc.

I use a banana bread recipe but substitute one cup of applesauce (or apple butter) in place of the banana. You can adjust the cinnamon and sugar depending on how much is in the applesauce.

Use it in a lovely autumn pork casserole - the sweet of the sauce nicely complements the pork.

I once made this to die for ( well almost ) pork with applesauce and maple syrup in the oven. Do you want the recipe?

Freeze it into popsicles. Marinate meat in it (and discard after of course). You can make it into a sweet & tangy BBQ sauce. You can fancy it up and hand it out in the office as Christmas gift - with home made dried pasta in a satchel, and apple spaghetti sauce.

I like to use it as a simple cake icing. You can mix cinnamon and a little vanilla extract in it if you like and then spread it on the cake (yellow, white, spice). Sometimes if I make round layers of cake I will split the layers and put applesauce in the middle of those too. Makes a very moist cake with less fat and sugar, and it tastes great too. Kind of like this. I made some oatmeal-raisin-walnut cookies last week and they turned out very dry, probably because I used whole wheat flour and old fashioned oats instead of quick oats. I think next time I make them I will add a cup or two of applesauce and see if that gives them a softer texture.

I still have quite a bit of it (it's canned, tho, so will last awhile). So far I've made applesauce chocolate chip cookies and used it as a substitute for oil in some of my baking...

I actually used log cabin maple syrup becuase I couldnt find pure maple syrup around here, and it tasted really good. Now we have pure maple syrup in the stores, I'm sure it's better with that.

My DH's favorite bread machine recipe uses applesauce in place of the oil. It's a nice standard white bread recipe, and the applesauce is not something you taste so much in the bread, it just adds moisture. You might want to check that out. Also, some of the low fat cookbooks I have use applesauce in things like oatmeal or peanut butter cookies.
